Pommes De Terre Soufflé (Puffed Potatoes) is an old recipe (Early
1900's) that was prepared at (amongst other places) Fair Oaks Plantation
in Washington Parish. I don't think the plantation exists today.
This (as you'll notice) is not your traditional Soufflé.
Red Potatoes, peeled and sliced 3/16" inch (thickness of a silver
dollar)
Salt and Pepper
Soak potato slices in ice water a few minutes, drain and dry with paper
towels.
You'll need two frying pots; one on a low heat and one on a high heat.
Begin cooking several of the slices in the warm oil until they just get
soft.
Take out and let cool. Now place them in the high heat pot of oil and
cook until they puff up.
Take out and move around on paper towels to soak up some grease.
Sprinkle with salt and pepper.
