An Old Family Classic
A staple at my wife's grandmothers for years, every time we had baked
ham, it was a "side". It goes great with baked ham and is sooo good, I
can make it go with anything. I eat it the next morning with eggs. Not
sure if you can still get 16 oz pkg. of Hash browns, but try to get two
small bags of frozen chunk hash browns, equaling 32 oz. or so. This is
an excellent dish, one I was married in to, but love, almost as much as
my wife, even though we have been married a while.

Party Potato Casserole
2 16 oz pkg. Frozen Hash Browns
1/2 cup melted butter (divided)
1/2 tsp. Salt
1/4 tsp pepper
1/2 cup green onions
1 can cream of chicken soup
1 pt. Sour cream
2 cups shredded sharp or med. Cheese
2 cups crushed Corn Flakes
Mix defrosted potatoes with 1/4 cup melted butter, salt, pepper, green
onions, sour cream, cheese and soup.
Put in lightly greased 9 x 13 baking dish .
Mix Corn Flakes and 1/4 cup melted butter.
Put on top of mixture and bake 45 min. at 350F.
