Boiled okra has been a favorite of mine since I was small. Boiled okra
sounds like a simple title to a recipe you couldn't mess up. However if
it's overcooked it becomes a slimy mess and you certainly don't want
that.
Boiled Okra
Small okra (2 - 3" avg.)
Water
Salt and Pepper
Use a pot large enough to fit the okra 3/4 of the capacity. Add water a
little over half way and bring to a boil. Rinse okra and add to the pot
of boiling water. Boil 5 minutes (watch so it doesn't foam over), stir
and start testing the okra.
Test the okra with a fork right below the crown (near the stem) trying
to pierce it. As soon as the fork penetrates the okra it is done. Remove
the okra into a colander to drain and season.
To make testing easier, use a spoon to hold the okra and attempt to
pierce it. Be careful not to burn yourself.
