Oysters are a big deal here in South Louisiana and dishes include gumbo,
jambalaya, Oysters Rockefeller, Oysters Bienville, soup, baked, grilled,
fried, and of course, good old oyster po-boys. See "Seafood"

Oysters don't take long to cook. Three to six minutes is usually all it
takes depending on the size. The longer they cook the tougher they'll
get. You can tell when an oyster is done when the edges curl.
Oysters are also used in stuffings and dressings. Oyster soup is great
too and is cooked in two different styles; one is creamy the other is
gumbo-like. Oysters on the half shell is a big favorite here in South
Louisiana and we even have Oyster-Bars to prove it!
