Cooking Louisiana  -  Red Bean Soup
Red Bean Soup - This is a nice light soup that red bean lovers will really like.

1 med. onion chopped
1/2 cup salt meat cubed
3/4 cup smoked sausage cubed
1/2 cup bell pepper diced
1 - 8 oz. can tomato sauce
1 can Rotel
2 cans red beans
5 cups water
1/2 cup green onion chopped
1 tsp. garlic powder
1 lg. potato cubed
1/2 cup macaroni
1 tsp. sugar
salt and pepper to taste

In a stock pot sauté onions and bell pepper in oil. Add meats and and continue to sauté another 5 minutes. Add tomatoes and sauce and sauté another 15 minutes. Add remaining ingredients and cook until potatoes are done. Smash a few potato cubes to thicken.
