Cooking Louisiana  -  Creamy Crawfish Soup
Crawfish and crab bisque style soups are some of my favorites. This is a simple and quick Crawfish Soup and it's delicious.

1 - onion chopped
1 - stick of real butter
1 - lb. crawfish
3 - cans of potato soup
2 - cans cream style corn
2 - lg. cans evaporated milk
1 - cup chopped green onions
1/2 cup chopped parsley
Creole seasoning to taste

Saute' onions in butter until soft. Add crawfish and Creole seasoning and saute a few minutes.

Add corn, soup and milk. Bring to a slow boil and add parsley and green onions. Cook for five minutes and taste.
