Cooking Louisiana  -  Chef Sterling's Cajun Tiger Omelet
This is one dish you're sure to love, and, is the best Cajun Omelet "Tiger Style" I've tasted so far.

1/2 lb. (1 link) fresh Cajun green onion sausage, or whatever you can get
8 eggs
2 - 3 tbs. milk (approx.)
1/2 onion chopped
1/2 chopped bell pepper
1/2 fresh tomato diced
1/4 cup green onions chopped
1 sm. can of sliced button mushrooms
1 jalapeno chopped (the bite)
pinch of salt and cayenne pepper

Mix eggs, milk and seasoning.

On a med-low fire fry the sausage and break it up then remove. In a small amount of butter or margarine add onion, bell pepper, tomato and jalapeno and cook until wilted. Add sausage and green onions and cook for another few minutes.

Whip eggs again and add to pan. Put fire on low, cover and cook until eggs are done. You can let it cook as is or stir it around, your choice.
