Cooking Louisiana  -  Brenda's Zucchini Bread
Zucchini Bread - (Can be doubled)
(This is good!!!)

2 eggs
2 cups sugar
1 cup oil
2 cups peeled grated zucchini
3 tsp. vanilla
3 1/2 cups flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1/4 tsp. baking powder
1 cup chopped nuts

Beat eggs until light and fluffy. Add sugar, oil, zucchini and vanilla...mix lightly.
Sift together...flour, salt, soda, cinnamon, baking powder and nuts.
Mix and bake in greased/floured loaf pans for 1 hour at 350ºF.
Test the middle to make sure it is done. These freeze well.
