Cooking Louisiana  -  Blackberry Dumplings
Blackberry Dumpling Recipe: This is one al my all time "fattening favorites". Warm Blackberry Dumplings with Ice Cream... man!

Ingredients:
For the Blackberries:
1 gallon blackberries cleaned, washed
and well drained

2 1/2 cups granulated sugar

Water to just cover the blackberries

For the Dumplings:
1 box yellow cake mix
1/2 tsp. baking powder
2 1/2 cups all purpose flour
2 beaten eggs
2 cups water


Directions:
Put berries, sugar, and water in a large pot. Bring to a boil and cook on medium heat for approximately 20-30 minutes stirring frequently. Mash the berries to get the juices flowing.

While the berries are cooking, mix the cake mix, the eggs, the baking powder and the water. Add flour gradually and mix until the dough is a little stiff. Knead by hand.

Drop the dough by teaspoonful's into the berries that are cooking on simmer. Make sure that the dumplings are far enough apart to allow them to rise. Cover and simmer 5 minutes.

Turn the dumplings over on the other side, cover and cook 5 more minutes.
