Cooking Louisiana  -  Remy's Stuffed Jalapenos "Cajun Style"
Stuffed Jalapeno Pepper is a great appetizer and real easy to prepare.

Ingredients:

24 jalapeno peppers (banana pepper is a good substitute)
1 lb. ground meat
1 cup diced onion
1 tbs. minced garlic
2 tbs. all purpose flour

1 box ready made pancake mix, it must say ADD WATER ONLY!! (batter to fry)

Cut stem end of jalapenos removing membrane insides and ALL SEEDS. This is very important, if any seed is left it could be a painful experience! Then wash and inspect for seeds again.

Hint: use latex kitchen gloves to protect yourself from getting juices on your hands

Cook ground meat in skillet adding onion, garlic and salt & black pepper to taste.
Drain any grease then reheat on low for a few minutes. Remove from heat and add flour, mix well until you can squeeze the ground meat with your hand and it keeps it's form.

Then stuff meat mixture into seedless jalapenos

Make batter following directions on Pancake Mix

Dip stuffed jalapeno in batter, Fry to golden brown

Best served with Coors Light
