Cooking Louisiana - Mirliton Casserole

Mirliton casserole is a variation of the stuffed mirliton recipe. This mirliton casserole recipe uses homemade sausage as opposed to ground beef. I also brought this mirliton casserole recipe a bit further in the way I cooked the veggies....

2 med onions chopped
1/2 med bell pepper chopped
3 stick celery chopped
2 links fresh homemade sausage
2 cloves garlic minced
3 cups (about) cooked mirliton
1/2 cup (about) chopped green onions
1/2 handful chopped fresh parsley

Mirliton CasseroleAdd first three ingredients along with sausage taken out of the skin into a large skillet. On a medium fire cook for an hour. Stir every five minutes or so to wilt the veggies down and cook the sausage.

After you get the above going split each mirliton in half and put them to boil. Boil until almost fork-tender... don't over do them. 

Back to the veggies and meat... at about the 45 minute mark add the green onions and garlic. Stir well frequently.

While the above is on the finish line put the cooked mirliton in a colander and let cool until you can handle them. With a spoon scoop out the seed to the trash and then the meat to a bowl. Discard the peelings.

Put the oven on 365ºF to pre-heat.

Mirliton CasseroleAdd the mirliton to the skillet and add the parsley. Mix well and add a few sprinkles of salt and fresh ground black pepper. Add a pinch of cayenne and thyme. Stir well, let sit for a minute and taste. Add more seasoning if needed. 

 

 

 

 

Take the mixture and put in a casserole dish, sprinkle bread crumbs in it and bake until the crumbs are lightly browned or until you can't wait any longer!

 

Can you freeze this? Yes, air tight in a zip-lock.
