Oyster Dressing
Ingredients:
2 Tablespoons cooking oil
1 medium onion
4 cloves of garlic
1 pint of oysters with juice
½ cup
chicken gizzards or livers (cooked) or both (optional)
1 cup cooked rice
1/2 cup water as needed
Instructions:
Put cooking oil into pot and heat. Add, chopped onion
and garlic, cook until well done. Cut up oysters and add, cook until done.
Strain oyster juice to remove any shells, add enough water to make 1 1/4
cup of liquid, add with oysters. Add rice and
stir. Add gizzards and or livers (if desired). Cook until rice is
done. Let stand for 5 minutes to
enhance flavor.
