Cooking Louisiana - Tammy's Crab Au Gratin

This is a thick & rich recipe... get out the spoon and/or chips. Ingredient amounts are important.

7 tbs. real butter
3 cloves garlic
1 med onion chopped fine
2 stalks of celery chopped fine
1/2 cup all purpose flour
13 oz. half & half
1 lg. egg beaten
1 tsp. salt
1/2 tsp. black pepper
1 cup crab meat
1/2 lb. grated cheddar cheese
1 cup fresh sliced mushrooms

Sauté onion and celery in butter until soft Gradually add flour and milk.. stir constantly until thickened (medium fire).

Add egg, salt and pepper and simmer for five minutes.. stirring. You have to cook the egg!

Add crab meat and mushrooms, mix well and put in a casserole dish. Sprinkle cheese on top and bake on 350ºF until cheese is melted...maybe 10 minutes.
