Cooking Louisiana - Parsley Sauce

Parsley Sauce is great with baked or grilled fish.

3 tbs. real butter
3 tbs. all-purpose flour
1-1/4 cups milk
1/4 tsp. each salt and fresh ground black pepper
Pinch of Cayenne pepper
3 tbs. fresh chopped parsley  

Melt the butter in a saucepan and stir in the flour mixing well. Cook over a medium-low heat for 2-3  minutes, stirring constantly.

Remove from heat and slowly add some of the milk while stirring (mix very well). Continue to add milk slowly, stirring all the time to make smooth. Add salt and peppers.

Put back on the stove and bring to a boil, stirring, for 2-3 minutes (this will thicken it). Lower heat, add parsley and simmer for 5 minutes, stirring. Serve hot.
