Cooking Louisiana - Gina & Jackie's Spaghetti 

3 jars Classico tomato sauce mix 
2  big cans (29 oz.) tomato sauce 
4 bay leaves
Dry Italian seasonings (if mixed  use 1/4 - 1/2 cup)
If separate: Oregano, Tarragon, Basil, etc.
Cook above for 5-6 hours in crock pot.
 
Boil 2 chickens then de - bone.
To the water you boiled the chicken in add:
Salt, pepper
Season all or other multi-season mix
1 Tbs. Ex. Virgin Olive oil
1/2 cup hot sauce (won't taste it)
Boil the  noodles in this after you take the chicken out
 
Transfer to a pot, then add:
3 onions chopped
2 bell peppers chopped
Inside celery stalks (leaves and tender stalks) chopped
5 garlic cloves - chopped
1 bunch onion tops chopped
1/2 bunch of parsley chopped
1/4 - 1/2 cup sugar (add 1/4 cup then taste - add until it doesn't taste so acidic)
 
After about an hour of the above cooking (at least medium - want vegetables soft)
add chicken and 3 packs sausage (I only use Hillshire Farm beef smoked sausage) cook another 30 minutes (to fully heat meat).

Feeds about 15-20
