Cooking Louisiana - Cheese Herb Bread

This bread has got to be the Mother of all Breads.

Cheese Herb Bread

1 1/3 cups + 2 tablespoons water
1/4 cup honey
2 tablespoons Olive Oil
2 1/2 cups Whole Wheat Flour
1 cup bread flour
2 tablespoons dry powdered milk
3 teaspoons Vital Wheat Gluten
1 1/2 teaspoons salt
2 1/4 teaspoons Saf-Instant Yeast
1 cup shredded sharp cheddar cheese
1 tablespoons grated Parmesan cheese
1 teaspoons dried marjoram
1 teaspoons dried thyme
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon garlic powder
Optional: 1 to 2 tablespoons of Jalapeno peppers
(remove the seeds, tops, and membranes)

Directions

Place ingredients in bread machine pan in the order suggested by the manufacturer.

Select the Whole Wheat Bread cycle Medium Crust, or, Select Whole Wheat, dough cycle

Remove and form into 2 loaves, let rise for at least one hour (90 degree oven)

Coat lightly with oil to keep from drying.

Bake at 350F for 20 to 30 minutes till crust is dark brown

For a crispier crust, put a pan of boiling water on the bottom shelf during baking.
