Listeriosis... the little known but potential killer.

Listeriosis is a disease caused by the listeria bacteria. An estimated 2,500 people in the U.S. get it, and of that number, 500 die.

This problem is as not as well known as Salmonella or E. Colli but none the less is something to be aware of.

Although rare the infection can be prevented by strict adherence to food safety guidelines. The most at risk groups are children, pregnant women and seniors.

Listeria bacteria, unlike some others, can grow at refrigerated temperatures (<40ºF). According to the U.S. FSIS (Food Safety and Inspection Service) prevention methods are:

•Respecting "Sell By" and "Use By" dates on all packaged foods.


•Wash vegetables well, very well!


•Following all cooking guidelines for proper "done" temperatures.
