Cooking Louisiana  -  Crawfish Tail Meat
Fresh Louisiana Crawfish Tails are always in demand. Louisiana Crawfish Tails are best purchased during the crawfish season and usually toward the end, around May/June. You won't usually find fresh crawfish tails frozen here in Louisiana during the season. Grocers and seafood retailers will have them iced down or frozen. When you see FROZEN crawfish tail meat in the store OUT OF SEASON, it's most likely imported crawfish... do what you have to do, I'm not buying them... I don't care how cheap they are.

Here's a little tip when buying, fresh Louisiana crawfish tail meat.

I normally buy it to throw in the freezer for future use. Before I put it in the freezer I divide the tails my manipulating the package to divide each one in half. I don't ever open the package though. I do this because I don't always need a whole pound of crawfish tails.

Just use your fingers to push the meat away from the center. Then fold the package in half and freeze it folded.

Below is a package frozen that I did that to, pulled it from the freezer and unfolded it. You can plainly see the center has no meat there.

Now, simply take a pair of kitchen shears and cut the package in half.

Now you have two 1/2 pound packs of crawfish. Just wrap the remaining crawfish in plastic wrap and put it back in the freezer.

Simple huh?

Now go make an omelet or dip!
