Cooking Louisiana - Mickey Brown's Hot Tamales

If you're from Southeast Louisiana you certainly know the name Mickey Brown. Mickey Brown's Hot Tamales have been around since the mid 50's. Mickey Brown's Hot Tamales come packaged without a sauce and they are delicious just as they are. You can make them even better if you make your own sauce and let them warm in it.

Mickey Brown's Hot TamalesThe tamales are wrapped in vegetable parchment paper so you don't want to get them too hot, a very low simmer is all you need.

The following amounts will take care of about four packs of tamales.

3 - 16 oz. Tom. Sauce
3 Tbs. Chili Powder
2 Tbs. Onion powder
1 Tbs. Garlic Powder
1 Tsp. cayenne
1 Tsp. salt
1 Tbs. Sugar
3 cups water…
Optional - 1 tsp. Zatarains liquid crab boil.

Place the tamales in a sauce pot and layer them cross-hatch.

Mix all the sauce ingredients well and pour over tamales. Add water to just cover tamales. Bring to a slow boil then lower heat to simmer about 20 minutes. Turn off the heat and cover.

You can adjust the ingredient amounts to handle the amount of tamales you have.
